Mexican Salad

Ingredients

1½ cups cooked black beans
1½ cups cooked corn
1½ cups carrots
4 cups spinach
½ cup red onion, diced
1 sweet pepper, diced
1 avocado, sliced
1 cup green onions, chopped
½ cup cilantro, chopped
1 lemon, juiced
2 tbs. extra virgin olive oil
1 tsp. cayenne pepper
sea salt to taste

Instructions

In large bowl, combine red onions, green onions, sweet pepper, carrots, spinach, avocado and cilantro.
Add black beans and corn.
Add lemon juice, cayenne pepper, olive oil and sea salt to taste.
Mix well
Top with salsa
