Rainbow Vegetable Slaw
Ingredients
½ medium head purple cabbage
1 head cauliflower
1 large bunch broccoli
3 carrots
2 red bell peppers
2 yellow bell peppers
1 yellow onion
1 cup macadamia nuts
1½ lemons, juiced
1/3 cup extra virgin olive oil
sea salt and pepper

Instructions
Roughly chop the vegetables (first 7 ingredients) in food processor.
Transfer shredded veggies to large bowl.
Grind macadamia nuts in small blender.
Mix the lemon juice, olive oil, sea salt and pepper to taste and add the ground macadamia nuts.
Pour mixture over veggies and toss.
