Vegetable Hash
Ingredients
2 tbs. extra virgin olive oil
1 onion, chopped into small pieces
1 potato, chopped into small pieces
1 carrot, chopped into small pieces
½ pound of asparagus, chopped
1 cup chicken broth
salt and pepper to taste

Instructions
In large pan, heat olive oil over medium high heat.
Add onions, potatoes and carrots, cook about 15 minutes or until vegetables are lightly browned, stirring often.
Add asparagus and broth, cook until about 3-5 minutes or until asparagus is soft.
Continue to cook until broth has evaporated and the bottom of the hash is crispy.
If desired, serve with fried or poached eggs.
